Recipe: Roasted cabbage and carrots

20151103_13231920151103_132109Disclaimer: My husband hates most things healthy and this was no exception! Lol But if you’re like me and want an easy, healthy and light on the wallet meal or even as a snack, this is a must!

Also cabbage has so many health benefits including increasing your breastmilk supply! (mommy score!!! 😃)


  • 1 head of cabbage
  • 1 tbs olive oil
  • Salt&pepper to taste
  • 1/2 cup balsamic vinegar
  • Package of baby carrots

First preheat your oven to 400 degrees

Cut cabbage into wedges (I did 8 pieces)

Next in a large bowl mix mix olive oil and vinegar

Dip each piece in the wet mixture on both sides and lay on a baking sheet

Toss baby carrots in wet mixture and sprinkle on the baking sheet over the cabbage

Season to taste

Baste as you wish

Bake for 20-25 min (no flipping)
